does anyone know where I can find outdoor shops in Tokyo? Or where I can buy a backpack for traveling?

ICI Sports (Ishii sports ): Nishi-shinjuku

Hammer head has it right. ICI-Ishii Sports generally has a pretty good assortment of packs (although it's winter season now, so some of their space has probably been switched over to skis, etc.).

The Harajuku shop is pretty convenient for a lot of people.
